The Best Chocolate Chip Cookies

This recipe uses our signature rapeseed oil as the base fat, for a distinctive take on classic chocolate chip cookies.

Method

  1. Heat the oven to 190°C and line two baking sheets with parchment.
  2. Using an electric mixer, combine the oil with both sugars until creamy.
  3. Add the vanilla, baking soda, eggs and cornflour, mixing thoroughly after each addition.
  4. Add the flour and mix gently until combined.
  5. Fold in the chocolate chips.
  6. Shape the dough into small balls and arrange on the prepared sheets.
  7. Bake for 8–9 minutes, until the tops are set. Avoid overbaking.
