The Best Chocolate Chip Cookies
This recipe uses our signature rapeseed oil as the base fat, for a distinctive take on classic chocolate chip cookies.
Method
- Heat the oven to 190°C and line two baking sheets with parchment.
- Using an electric mixer, combine the oil with both sugars until creamy.
- Add the vanilla, baking soda, eggs and cornflour, mixing thoroughly after each addition.
- Add the flour and mix gently until combined.
- Fold in the chocolate chips.
- Shape the dough into small balls and arrange on the prepared sheets.
- Bake for 8–9 minutes, until the tops are set. Avoid overbaking.
