The Best Vegan Banana Cake

Method

  1. Heat the oven to 180°C and prepare a 900g loaf tin with grease and parchment.
  2. Combine the flour, baking powder, bicarbonate of soda, cinnamon and caster sugar in a bowl.
  3. In another bowl, mash the bananas, then mix in the rapeseed oil, oat milk and vanilla extract. Stir this into the dry ingredients until well combined.
  4. Transfer the batter to the tin, arrange the halved banana on top and sprinkle with demerara sugar.
  5. Bake for approximately 1 hour, until a skewer inserted in the centre comes out clean. Cool in the tin before turning out.
