Method
- Heat the oven to 180°C and prepare a 900g loaf tin with grease and parchment.
- Combine the flour, baking powder, bicarbonate of soda, cinnamon and caster sugar in a bowl.
- In another bowl, mash the bananas, then mix in the rapeseed oil, oat milk and vanilla extract. Stir this into the dry ingredients until well combined.
- Transfer the batter to the tin, arrange the halved banana on top and sprinkle with demerara sugar.
- Bake for approximately 1 hour, until a skewer inserted in the centre comes out clean. Cool in the tin before turning out.
